7QT and The One Pot Wonder Meal Link-Up

1.

What you see here is Peter's first day of high school and his last day of high school.  It would appear that he is kicking Constitutional Growth Delay all by his own self, having grown 11 inches in the last four years, and still not finished yet.  He is only about a half inch shorter than Patrick at this time.

2.  Patrick went digging through my Facebook page and commented on this oldie but precious:


3.  You may expect more photo collages and sweet sappiness next week after he actually graduates.  Lucky YOU!

4.  Sometimes homeschooling means your twenty-something uncle takes you to a matinee showing of the new Disneynature film, Bears.




We love all the Disneynature films, but African Cats and Chimpanzee are our favorites. If you haven't seen them, you are missing out.

5.  Come dinner time, my energy level is at it's lowest.  



Our meal plans have included regular rotations of Ling Ling frozen Pot Stickers from Costco (which I will never, never tire of), frozen lasagna, and meat on a bun.  

6.  Last night, we had Chuckwagon for dinner.

What is Chuckwagon?  

I should have taken a picture of the food.  Doh!
Chuckwagon is an ancient Thornton family recipe.  Rice, ground beef, canned tomato sauce, barbecue sauce, mustard, chili powder, onions, Red Hot if you're one of my kids, any bell peppers you have, and a sprinkle of Tony Cachere's.  Sort of like sloppy joes, but with rice, and no buns.

Everybody luuuuved it, including herself, after we told her that it was "Laura and Mary food."

7.  I need more One Pot Wonders like Chuckwagon and this other simple supper of Italian Sausage with Skillet Potatoes and Green Beans, because meat on a bun is getting very old.

I also need meals that I can double (or quadruple) and freeze half for post-baby days, so I am asking begging you to link up your best and brightest ideas for easy or freezy one pot wonders, new posts or old.  

Baby is due June 22nd, so Imma leave this link-up open until then.  Don't have a blog? Leave a comment or send me an email.

  1. We do meat on a bun here every night after I've made a big hunk of meat in the crock pot. Whatever's leftover, I just throw in the crockpot with a bunk of BBQ sauce. And if you call it BBQ sandwiches, it sounds a lot fancier than meat on a bun! I serve with a side of french fries so the kids are always happy.

  2. It's not quite one pot, but it sure is dead easy. Take stew beef and throw in the crock pot, be sure you're using a Reynolds crock pot liner (my favorite gift for new babies). Then, pour a jar of salsa on top. Cook on low for whatever works for you or 4-6 hours. Then serve on top of egg noodles. I usually cook up a huge batch of egg noodles, then throw in a little oil, and freeze in tupperware. Then you can microwave the right amount of noodles, and dump the beef on top. Enjoy!

  4. Jessica, Chuckwagon sounds exactly like the cuban dish Picadillo! Well, minus green olives. It's our favorite easy one pot wonder. Any chance there's a little Cuban in the Thornton blood line? One of Anne's Liebster questions was about go-to meals and Picadillo was my answer.
    Unfortunately, this information is of no use to you, since you basically already know the recipe. And guess what our other go-to meals is... TJ's potstickers in broth or stir fried. I am a one-pot kinda gal, though, and will figure out something creative to contribute to your link-up.

    1. I was going to link the same recipe you did! Our family loves "salsa chicken" and it covers at least one extra meal and lunches for us! During the winter I throw a cup of chicken broth in it and eat it like tortilla soup with crunches up chips and a sprinkle of cheese!

  6. Is it terrible that this post just really makes me want those potstickers? I love those things so much... And we were even AT Costco yesterday and I thought, "Man, I should get some potstickers!" But then they were all the way down an aisle we weren't already going down and I got distracted by a sample...

    Life. It's just really hard, you know?

  8. I'm expecting #5 in 4 weeks...LESS THAN 4 weeks {little freak-out}!... so I will be following this link up with very great interest! Also, these may not count as one-pot wonders, but they got me through some months of crazy low interest in meal prep -- freezer to crock pot meals. I found the idea first at this post: http://froggingit.wordpress.com/2014/02/19/five-favorite-freezer-to-crock-pot-meals/
    Then I went to the websites she linked to and browsed around for ones that we might like. Sausage Bean Supper doesn't sound like much, but it is DELICIOUS. Nothing like out of the freezer, into the crock pot, ready at dinnertime.
